Spam and it's many uses

This Blog is all about FOOD! Recipies we have to share, Information we need to know, all that stuff. If you have a question for Ethel write it here and we will answer it, Then everyone can learn.

Today's topic is SPAM Some of us love it, Some of us hate it, some of fear it, some of have no idea what it is! Apparently there are people who cook with it, and so I'm putting a few Spam recipies in here for those of us who care to put it in our food storage pantry because it is a source of protein, It is meat sort of, It has a long shelf life and might just make a tasty breakfast someday when you are out of everything else. I got these off my gmail account so I thought I'd share. Kids usually love spam for some reason, it goes well with that nasty macaroni and cheese from a box! Add some green beans and you have a kids meal made in heaven. They have spam made from Turkey now for those us who shudder to think about eating what ever it is.

CANTONESE SWEET AND SOUR SPAM
Categories: Chinese, Pork Yield: 4 servings

1 tb Cooking oil
1 lg Carrot sliced diagonally
6 Green onions, sliced 1/4 inch
1 Clove garlic, minced
1 sm Cucumber, cut into chunks
2/3 c Water
1 tb Cornstarch
3 tb Each: sugar, ketchup and 1 ts Soy sauce , Vinegar
12 oz Spam, cubed 1/2 inch
8 oz Bamboo shoots drained
In large skillet, cook oil over medium heat. Add carrot, green onion, garlic and cucumber; cook, stirring occasionally until crisp tender (4 to 5 minutes). Add remaining ingredients except Spam and bamboo shoots. Cook, stirring, until sauce is thickened. Add Spam and bamboo shoots. Cook until heated through. If desired, serve over rice.



Title: CRICKET'S SPAM QUICHE

Yield: 4 servings
1 c Coarsely chopped mushrooms
5 T Butter/margarine
1 c Finely crushed stone wheat crackers
1/4 c Green onions, sliced
1/4 c Brown onions, chopped
3/4 c Monterey Jack cheese
3/4 c Medium Sharp Cheddar cheese, grated
3/4 c Mozzarella cheese, grated
1 c Ricotta cheese
4 ea Eggs
1/4 t Cayenne pepper
1/4 t Paprika
1/4 c Milk
1 ea Cooked artichoke
1/4 c Green bell pepper, chopped
1/4 c Red bell pepper, chopped
1 cn Spam, shredded

Saute mushrooms in 3 Tbs butter until limp. Stir in the crushed crackers, then turn into well greased 10-inch round quiche pan. Press mushroom mixture evenly over bottom of dish and up the sides. Melt remaining butter, add onions, saute and add shredded Spam. Layer shredded cheeses and Spam in dish. In blender, whirl the eggs, ricotta, milk and cayenne until smooth. Pour into crust and sprinkle with paprika. Place sauteed red and green bell peppers on top.
Bake in oven at 375 for 40 to 45 mins. Garnished with cooked artichoke.


CREAMY SPAM BROCCOLI CASSEROLE
Serving Size : 8 Preparation Time :0:00 Categories : Casseroles Main dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Vegetable cooking spray
1 pk Elbow macaroni (7 oz)
2 c Frozen cut broccoli, thawed and drained
1 cn SPAM Luncheon Meat, cubed (12 oz)
1/2 c Chopped red bell pepper
2 c Skim milk
2 TBsp Cornstarch
1/4 t Pepper
1 c Shredded fat-free Cheddar cheese
3/4 c Soft bread crumbs
2 Tsp Margarine, melted
Heat oven to 350'F.
Spray 2-casserole with vegetable cooking spray. Cook macaroni according to package directions; drain. In casserole, combine macaroni, broccoli, SPAM, and red pepper. In small saucepan, stir together milk, cornstarch, and pepper until cornstarch is dissolved. Bring to a boil, stirring constantly, until thickened. Reduce heat to low. Add cheese; stir until melted. Stir sauce into SPAM mixture. combine bread crumbs and margarine; sprinkle on top of casserole. Bake 40 minutes or until thoroughly heated.

HEARTY SPAM BREAKFAST SKILLET

: Serving Size : 6 Preparation Time :0:00 Categories : Main Dish Beverages Breakfast Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------
2 c Frozen diced or shredded -potatoes 1/2 c Chopped onion
1/4 md Green bell pepper, cut into -1″ thin strips
1/4 md Red or yellow bell pepper, -cut into 1″ thin strips
2 ts Oil
1 cn SPAM Luncheon Meat, cut into -julienne strips
(12 oz) 1 cn Frozen fat-free egg product, -thawed,
OR 4 Eggs
1/4 ts Dried basil
1/8 ts Salt
1/8 ts Pepper
6 dr Hot pepper sauce
1/4 c Shredded Cheddar
In large non-stick skillet, cook potatoes, onion, and peppers in oil over medium-high heat 5 minutes, stirring constantly. Add SPAM; cook and stir 5 minutes. In small bowl, combine egg product, basil, salt, pepper, and hot pepper sauce; blend well. Pour over mixture in skillet. Cover. Cook over medium-low heat 8-12 minutes or until set. Sprinkle with cheese; remove from heat.


Title: Spam-Mac Casserole

2 c Milk
1 (7 oz.) pkg. elbow macaroni
1 c Shredded Swiss cheese
2 tb Margarine or butter
1 cn (12oz.) Spam, cubed
1/2 c Chopped onion
2 tb Flour
1 c Frozen peas and carrots
1 ts Dijon mustard
14 ts Pepper
Buttered bread crumbs

Directions: Prepare elbow macaroni according to package directions; drain. In medium saucepan, melt butter. Add oni9n, cook until tender. Stir in flour, mustard and pepper. Blend in milk. Cook, stirring constantly, until thickened and bubbly. Add cheese; stir until melted. Combine macaroni, Spam, peas and carrots, and cheese sauce. Pour into a 3-quart baking dish. Top with bread crumbs. Bake in 350 degree oven until hot and bubbly, about 30 minutes. Refrigerate leftovers. 6 to 8 servings.
